Our winemaker is an Ontario native that has a passion to produce high quality wines. After creating several vintages in the Niagara Peninsula, Paul Battilana moved to Prince Edward County to take on the position of winemaker here at Casa-Dea Estates Winery. Paul was in the first graduating year at Niagara College and has worked as an assistant winemaker at several high profile wineries in the Niagara Peninsula. He wants to produce fruit that expresses the terrior of our property so as to produce characterful, stylish, elegant wines.

His goal is to craft excellent wine

We are always learning from our vineyard and what it takes to produce premium grapes in Prince Edward County. Our winemaker is working constantly with our Vineyard Manager and field hands, to fine-tune unique viticulture practices to perfect the strengths of various blocks from our vineyard sites. In the cellars, ongoing advancements in yeast selection, specific barrel cooperage, vinification techniques and handling, are creating inspiring results. Our goal is to craft excellent wine, and our team must carefully oversee the vineyard, and learn to implement what is needed.
